Half of the recipes have dairy, half are dairy free, and most of the recipes with dairy can be made dairy free for those who want to limit their dairy intake. The book ends with a few lower carb cocktail recipes for those who want to play mixologist.

Diagnosed with celiac disease in 2002, Anna Vocino struggled to manage the effects of autoimmune disease and middle age weight gain while still being able to eat delicious and satisfying foods. In 2012, she started podcasting with Vinnie Tortorich and changed her way of eating to not only be gluten free, but also grain and sugar free. My Review

Over the years my eating habits have changed quite a bit. Growing up eating hearty loaves of bread with sandwich meats and cheese, and the good old kind of cooking with gravies, potatoes and creamed veggies with deserts on top of that, or trips to the bakery isn’t what I do anymore today. Certainly, on occasion, I will still do those traditional meals, especially for others, but I always modify or substitute my portions of the meal. I just can’t eat the way I used to anymore. Why? Because I can put on weight by looking at food across the table, thanks to hypothyroidism and some other issues.

It took me a long time to come up with what works for me. When I saw the opportunity to review EAT HAPPY TOO, I knew immediately that this is lining up with what I have been piecing together over the years in a sense. I am so pleased to say, that this book has hit the nail on the head for me. It is exactly how I cook and eat but adds a variety of ideas to my repertoire with amazing new recipes to try.

This is not a diet book. It gives you recipes that are grain-free, gluten-free, low carb and free of processed sugars. You might wonder, why someone would want to eat that way and I can only speak for myself or on behalf of family members with diet restrictions due to (chronic) illness. Sometimes, life involuntarily requires you to change. So, if you are looking for all four of the above dietary changes, or just want low carb and not grain-free, there is plenty of room to substitute and adjust in the recipes of EAT HAPPY TOO.

The book is organized by content in the following segments: food quality, starters, main dishes, soups & slow cook/casseroles, sides, sweets, breakfast, sauces & dressings, and drinks. Many of the recipes show pictures and the instructions are easy to follow. The entire collection of recipes looks fabulous and I have made the Baked Cauliflower Gnocchi, used the Carne Asada Dry Rub, made the salmon burgers (so good!) and tried the Thousand Island dressing. Next, I want to try the Pumpkin bars and the Apple Pie with crumble and Vocino’s recipe for the Paleo Banana pancakes.

Out of 160 possible choices to make something delicious, I will be able to use this book a lot. Though I have cookbooks, this one is spot on. From what I can tell, everything is easy to make. There isn’t a lot of fuss, just straight up simply good foods. Depending on your philosophy, it would be easy to alter recipes or add on to them, but this book offers the best possible base and ideas.

I don’t love cooking, I’m honest (I used to). I have cookbooks too and I pick out here and there and most of it I just make, no recipe needed. EAT HAPPY TOO is my kind of book. Most everything can be done rather quickly and the ingredients aren’t so exotic that you can’t find them anywhere or have to hunt them down. It’s great for quick lunch options, tasty and (bonus!) healthy.
